Star-Spangled Salad


Some of you patriots probably need a healthy pick-me-up after all of yesterday's rowdy revelry.   I know I certainly did and this was the perfect breakfast.  This simple recipe is packed with flavor and antioxidants to make you fit as a fiddle. When I spied the beautiful mangos at Farmer's Market this weekend Nigella Lawson's fruit salad came to mind.  You need only a few ingredients. 



Antioxidant Fruit Salad
Nigella Lawson

Ingredients
  • 1 mango
  • 1 cup blueberries
  • 1 pomegranate
  • 2 teaspoons lime juice
Directions  
Cut the mango in half around the stone, and then criss-cross the flesh of the mango halves with a knife into 1/2-inch squares. (How to dice a mango on youtube.)
Push the diced mango flesh outwards and then slice off the squares from the skin into a bowl.
Tumble in the blueberries, then halve the pomegranate and bash out the seeds with a wooden spoon over the mango. Finally squeeze over the lime juice and serve.

She says to "bash out" the seeds of the pomegranate, but that's vague.  Hold the halve in your hand and bang a wooden spoon on the skin repeatedly.  The seeds will start to fall into your hand.  If it's still confusing, here's a youtube demo.  It's a cool trick!

I haven't gotten around to making it (opted for making apple butter) but I'll make it soon.

I was going to say that Fresh & Easy sells pomegranate seeds like right next to the blueberries.
